Saturday was veggie day. We had overnite guests and we had bison patties on Friday and salad plus yellow squash and zuchinni. It was delicious, it was the first time our granddaughter had tasted bison and we did not tell her what we were cooking. She ate her patty and just bragged on how good it was. After everyone finished her Mother told her that it was bison or buffalo. She raved about it and said she would eat it again.
Our daughter is attempting to food combine and was very willing to eat just as we do.
Her family usually prepares home-made waffles on Saturday mornings so we had frozen waffles and smashed new potatoes. Because I do not eat gluten I have found a product that I can eat that is frozen and tastes pretty good. My husband can have gluten so his are made with wheat. Very tasty and we can have butter and maple syrup with them.
They ate blueberries and strawberries first while the waffles were heating. It was a satisfying breakfast.
The girls headed home and my husband found a recipe on a blog and was telling me about how to prepare the perfect baked potato, I had never heard of cooking a potato so long. Wash a russet potato dry it put olive oil on the potato cover it in seasalt and place it on the rack in a pre-heated oven at 350 degrees. Place a cookie sheet under the rack to catch any salt or oil now cook it for three hours. Yes, 3 hours. It will be the most delicious creamy potato you have ever eaten.
Try it! I was so surprised that the potato, which weighed 1 lb., was so creamy.
Growing up, my father owned a grocery store, but we very seldom ate potatoes. They were considered fattening and we just never had them at home. I have eaten more potatoes in the last year or so than ever before. I will prepare these again.+
